1 Cup Almond Flour1.25 Cups All-Purpose Flour0.66 Cup Granulated Sugar1 Teaspoon Baking Soda1 Teaspoon Baking Powder0.25 Teaspoon Salt0.66 Cup Vegetable Oil1 Cup Roasted Unsalted Almonds1 Large Egg YolkArrange an oven rack in middle position and preheat the oven to 350 degrees. Line 3 sheet pans with Silpats or parchment paper and set aside.In the bowl of a stand mixer on medium speed, add flours, sugar, baking soda, baking powder & salt and beat until well combined. Add oil and beat until a dough forms.Roll into small dough balls about the size of a golf ball. Flatten dough balls a bit and place a whole almond in the center of each one. Arrange cookies on prepared sheet pans about 1 inch apart.
