Chicken Breasts With Mushroom Sauce

Ingredients:
4 n/a Skinless, Boneless Chicken Breasts
1 tablespoon Salt & Freshly Ground Black Pepper
2 tablespoons All-Purpose Flour
2 tablespoons Olive Oil
6 cloves Garlic
0.75 pound White Button Mushrooms
0.25 teaspoon Dried Thyme
1 n/a Bay Leaf
0.25 cup Balsamic Vinegar
0.75 cup Chicken Stock
1 tablespoon Butter
Generously season the chicken with a 1/2 tablespoon of salt and pepper evenly. Combine the flour, with the remaining salt and pepper, and evenly coat the chicken.
In a large skillet, heat oil over medium-high heat and brown chicken for 3 minutes. Add garlic and mushrooms to the pan and satué for another 3 minutes, stirring occasionally.
Add thyme, bay leaf, vinegar, and stock and stir to combine. Reduce the heat to medium-low and simmer, covered for about 10 minutes, flipping chicken occasionally.
With a slotted spoon, transfer the chicken to a platter and tent with foil.
Simmer the sauce over medium-high heat for about 10 minutes. Stir in butter, and remove from heat. Discard the bay leaf.
Serve the chicken breasts with a healthy dollop of the mushroom sauce.
