4 Pounds Beef Brisket28 Ounces Italian Crushed Tomatoes1 Large Red Onion2 Tablespoons Red Wine Vinegar2 Tablespoons Worcestershire Sauce4 Cloves Garlic1 Tablespoon Brown Sugar1 Teaspoon Celery Seed1 Teaspoon Salt & Freshly Ground Black Pepper0.5 Teaspoon Ground Cumin0.5 Teaspoon Liquid Smoke4 Teaspoons Cornstarch3 Tablespoons Cold WaterHalve the brisket and place in 5-quart slow cooker. Combine tomatoes, vinegar, onion, garlic, Worcestershire sauce, celery seed, cumin, brown sugar, liquid smoke, salt and pepper in a bowl. Pour the mixture over brisket, cover and cook on low for 8 hours. Transfer the brisket to a serving platter and tent with foil to keep warm. Form a cornstarch slurry, by mixing the cornstarch and water in a small bowl. Combine the slurry with 4 cups of the cooking liquid and bring to a boil, and reduce to a simmer. Cook for a few minutes, or until the sauce thickens. Slice the brisket across the grain and serve topped with gravy.
