1 Pound Chicken Cutlets0.25 Cup Flour1 Tablespoon Olive Oil1 Cup Chicken Broth1 Garlic Clove2 Tablespoons Lemon Juice0.5 Teaspoon Lemon Zest2 Tablespoons Fresh Parsley2 Tablespoons Capers0.5 Teaspoon Salt & Freshly Ground Black PepperSeason chicken cutlets with salt and pepper and dredge into flour evenly.In a skillet, heat oil over medium-high heat and cook chicken cutlets for about 2 minutes per side. Transfer to a plate and keep aside. In the same skillet, add garlic and broth and bring to a boil. Cook till mixture reduces to half. Add capers, parsley, lemon zest and lemon juice and simmer for about 30 seconds. Place sauce over chicken cutlets and serve.
