3 Tablespoons Lard6 Cloves Garlic1 Large Onion6 Cups Water2 Teaspoons Seasoned Salt2 Teaspoons Crushed Red Pepper Flakes1.5 Pounds Smoked Ham Hocks1 Large Bunch Of Collard Greens1.5 Cups Dry White Wine0.25 Teaspoon Granulated SugarIn a 6-quart stockpot, Heat 1 tablespoon lard over medium heat. Saute minced garlic and onion for 5 minutes, or until the onions are softened. Stir in the water, seasoned salt, red pepper flakes, and ham hocks and bring to a boil and reduce to a simmer for one hour.Add remaining lard, chopped collard greens, wine and sugar. Bring to a boil again, and reduduce to simmer for another hour. Remove the ham hocks from the stockpot, and allow to cool for a few minutes. Debone the ham hocks, and shred the meat. Return to the collard greens and stir to combine.
