A bit of science and history

The science of cooking food under steam pressure was invented by a French physicist in the 17th century. His premise was simple—when food was cooked in a sealed pot of pressurized steam, cooking time was cut in half and the dish was extremely tender. All that was needed was a small amount of water and some appropriate spices. The wonder of pressure-cooked meals soon spread all over the world.

Another benefit of pressure cooking is that it does not use oil, which makes healthier meals. You can even make luscious desserts in your pressure cooker!
