In a large skillet, heat oil over high heat until sizzling. Season the chicken with 1/2 teaspoon of salt & pepper and arrange in the skillet skin-side down. Sear the meat until outside is crisp and golden, about 5 minutes. In a large plate lined with paper towels, transfer the chicken to drain and set aside. Reduce heat to medium-high heat and add garlic, onion, 1/2 teaspoon of salt & pepper and sauté for 1 minute. Add wine to deglaze the skillet, while scraping the bottom of the pan with a wooden spoon.
