Aioli Mashed Potatoes With Chives Recipe | RecipeSavants.com PT40M Serves 6 Ingredients: 3 Pounds Baby Yukon Potatoes 5 Cups Water 2 Teaspoons Kosher Salt 1 Teaspoon Freshly Ground Black Pepper 2 Fresh Bay Leaves 0.25 Cup Olive Oil 3 Tablespoons Chives 1 Large Egg Yolk 1 Small Garlic Cloves 0.25 Teaspoon Kosher Salt 0.25 Cup Grapeseed Oil 0.25 Cup Extra-Virgin Olive Oil 0.125 Teaspoon Cayenne Pepper 2 Tablespoons Fresh Lemon Juice 0.125 Teaspoon Freshly Ground Black Pepper In a large saucepan over medium-high heat, bring 5 cups water, potatoes, 2 teaspoons salt and bay leaves to a boil. Reduce heat to low and simmer until potatoes are fork-tender, about 20 minutes. In a colander, drain potatoes and reserve 1/2 cup of cooking liquid. Discard bay leaves and return potatoes to saucepan. Set aside. In a small saucepan, drape a kitchen towel and place a small metal bowl in the middle. In the small bowl, add egg yolk, garlic, 1/4 teaspoon salt and 2 teaspoons water. Whisk continually while drizzling grapeseed oil in, one teaspoon at a time until mixture is thickened. Keep whisking while adding olive oil in a slow stream. When mixture is thick & creamy, stir in cayenne, lemon juice and pepper. With a potato masher, mash the potatoes and mix with 1/4 cup olive oil and reserved liquid. Place the saucepan over medium-high heat and cook until potatoes are heated through, stirring constantly for 2 -3 minutes. Remove from heat and stir in half of aioli. In a large serving bowl, transfer potatoes and top with remaining aioli. Garnish with chives.
