Shake well to mix. Store in the container for up to 3 months. To prepare pancakes: Preheat electric griddle to 350 degrees. You may also heat a large skillet over medium-high heat. In a large bowl, add two cups of prepared pancake mix. Use a tablespoon to form a small well in the center of the mix. In a small bowl, add eggs & whisk until frothy. Pour eggs into the well of the pancake mix and stir to combine. Add buttermilk to the mixture and mix until it is just combined and not over-mixed. Allow batter to rest for at least 5 minutes.
