Chicken Skewers With Peanut-Ginger Marinade Recipe | PT35M Serves 6 Ingredients: 0.25 Cup Fresh Cilantro Leaves 1 Large Orange 0.5 Cup Peanut Butter 2 Tablespoons Dark Brown Sugar 0.25 Cup Soy Sauce 2 Teaspoons Fresh Ginger 4 Cloves Garlic 1 Teaspoon Red Pepper Flakes 1.5 Pounds Boneless Chicken Thighs 0.25 Cup Vegetable Oil 0.33 Cup Salted Peanuts In a small bowl, mix peanut butter, sugar, garlic, ginger, red pepper, juice, zest, soy sauce & red pepper flakes. Reserve 1/3 cup and pour remainder in a large, resealable plastic bag. Place skewers in a bowl of water to soak at least 30 minutes. Add chicken to the bag and seal. Shake well and refrigerate for at least 30 minutes. Meanwhile, preheat grill to 350 degrees and coat grates with oil. In a large bowl, transfer chicken and discard marinade. Thread 2 pieces of chicken on each skewer and grill until chicken in browned and cooked through, about 2 to 3 minutes on each side. Use the reserved marinade to baste the meat while cooking. Place skewers on a bed of steamed rice and top with peanuts and cilantro. Serve with remaining marinade.
