Mock Meatballs With Marinara Recipe | PT40M Serves 6 Ingredients: 2 Cans Chickpeas 2 Cloves Fresh Garlic 1 Small Red Onion 0.25 Teaspoon Cayenne Pepper 0.25 Cup Parmesan 0.5 Teaspoon Salt 0.125 Teaspoon Freshly Cracked Pepper 0.5 Cup Bread Crumbs 1 Large Egg 4 Tablespoons Vegetable Oil 1 Can Tomato Paste 1 Medium Yellow Onion 1 Can Diced Tomatoes 0.5 Teaspoon Dried Oregano 0.5 Teaspoon Dried Basil 0.5 Teaspoon Brown Sugar Place drained chickpeas in a food processor. Add red onion, parsley leaves, cayenne, garlic, salt and cracked pepper. Process until a paste of rough consistency forms. Remove into a bowl and add bread crumbs and egg to the chickpea paste. Mix until thoroughly combined. Roll the dough into small balls taking 1 tablespoon of dough in your wet hands at a time and shaping into ball. Heat oil in a heavy skillet over medium heat. Cook chickpea balls in batches until evenly golden browned. Once all of the balls have been cooked, add diced onion to the same skillet and sauté until softened. Then add diced tomatoes, tomato paste, oregano, basil, brown sugar and 1 cup water. Stir to thoroughly combine and let simmer for 5 to 10 minutes. Season with salt to your taste. Serve balls over a plate topped with marinara.
