Meatless Lentil LoafPT1H5M Serves 6 Ingredients: 0.5 Medium White Onion 0.5 Cup Mushrooms 2 Cloves Garlic 3 Stalks Celery 1 Cup Firm Tofu 1 Cup Old Fashioned Rolled Oats 3 Tablespoons Parsley 1.5 Cups Lentils 3 Tablespoons Soy Sauce 3 Tablespoons Ketchup 1 Teaspoon Dried Thyme 1 Teaspoon Dried Basil 1 Teaspoon Dried Fennel Preheat the oven to 350º F. Grease two regular loaf pans. Take mushrooms, onion, celery and garlic in a sauté pan with a splash of water and cook until tender. Season with salt and pepper. In a large bowl, add crumbled tofu, cooked lentils, oats, handful of parsley and sautéed vegetables. Then sprinkle fresh or dried herbs of your choice. Drizzle soy sauce and enough ketchup to hold the loaf together. If it’s still crumbly add more ketchup to it. Fold mixture into the loaf pans and press the mixture to tightly pack up into the pan. Bake for 50 minutes.
