Rub pork with salt and pepper, ¼ teaspoon each. Cook chops in a large heavy roasted pan heated with 2 tablespoons of oil over high heat, 3 minutes each side or until browned (not cooked completely). Move chops to a plate, turn down the heat to medium high and place halved potatoes over the pan, keeping cut side down. Cook for just 2 minutes and remove from heat. In a small bowl, combine vinegar, tomato paste, 2 tablespoons oil and ½ teaspoon pepper and mix well. In another bowl, combine 2 tablespoons of above prepared balsamic mixture with onion, thyme, potato and mushrooms and mix well. Add this mixture to a baking pan and bake for 25 minutes, stirring every 10 minutes. Place pork chops over mushroom mixture and bake again for 10 minutes. Remove pork chops, sprinkle vegetables with remaining ¼ teaspoon salt. Divide vegetables, pork chops, remaining balsamic vinegar and cheese equally between 4 serving plates. Serve.
