Kale, White Bean & Potato Stew Recipe | PT45M Serves 6 Ingredients: 2 Tablespoons Extra Virgin Olive Oil 1 Medium Carrot 1 Stalk Celery 1 Medium Onion 4 Cups Water 8 Ounces Yukon Gold Potatoes 1 Can Navy Beans 2 Teaspoons Red Wine Vinegar 0 To Taste Salt & Freshly Ground Black Pepper In a pan, heat oil on medium heat. Add carrot, celery and onion and sauté for about 6-8 minutes. Add water and potatoes and bring to a boil. Reduce the heat to low and simmer for about 10 minutes. Stir in beans and kale and simmer for about 6-8 minutes. Stir in vinegar, salt and black pepper and remove from heat.
