Combine sake, miso, mirin and brown sugar in a bowl. Toss in squid. Transfer squid along with marinade to a zip lock bag. Seal the bag and then place in water bath for 2 hours. Once timer goes off, remove bag from water bath and take calamari out of the bag. Pat dry calamari and discard remaining marinade. Preheat a grill pan for 5 minutes over high heat.
