Ingredients:
2 Tablespoons Cooking Sake2 Tablespoons Miso Paste2 Tablespoons Mirin2 Tablespoons Light Brown Sugar3 Tablespoons Chile Oil8 Ounces Squid Bodies1 Medium LemonSet your Sous Vide cooker to 138 degrees F. Combine sake, miso, mirin and brown sugar in a bowl. Toss in squid. Transfer squid along with marinade to a zip lock bag. Seal the bag and then place in water bath for 2 hours. Once timer goes off, remove bag from water bath and take calamari out of the bag. Pat dry calamari and discard remaining marinade. Preheat a grill pan for 5 minutes over high heat. Sear calamari for 30 seconds until charred. Transfer charred calamari to a bowl and stir with lemon juice and chile oil.
