Hominy & Cannellini Bean Chili Recipe | PT45M Serves 4 Ingredients: 2 Cans No-Salt-Added Cannellini Beans 4 Ounces Meatless Mexican Chipotle Sausage 1 Tablespoon Olive Oil 1.5 Cups White Onion 2 Medium Poblano Chiles 3 Cloves Garlic 2 Teaspoons Chili Powder 1.5 Cups Water 1 Teaspoon Ground Cumin 2 Tablespoons Fresh Oregano 2 Teaspoons Hot Pepper Sauce 1 Can White Hominy 0.5 Teaspoon Salt 2 Tablespoons Scallions 2 Medium Limes 2 Tablespoons Fresh Cilantro Mash 2/3 cup of total bean using a potato masher or a fork. Heat oil in a large Dutch oven over medium heat. Stir in sausage and sauté for 4 minutes. Then add poblanos, onion and garlic and cook for 6 minutes. Add cumin and chili powder and cook for 30 seconds. Then add whole beans, mashed beans, oregano, salt, hot pepper sauce and hominy. Let boil, reduce heat, cover and simmer until slightly thickened or for 20 minutes. Add in cilantro and scallions. Serve topped with lime wedges.
