Skillet Jalapeno CornbreadPT50M Serves 10 Ingredients: 0.5 Cup Unsalted Butter 0.33 Cup Granulated Sugar 2 Large Free-Range Eggs 1 Cup Buttermilk 1 Cup Stone-Ground Cornmeal 0.5 Cup All-Purpose Flour 0.5 Teaspoon Baking Soda 0.5 Teaspoon Sea Salt 1 Small Jalapeño Pepper Preheat oven to 350°F. Lightly grease a 9-inch cake pan or cast-iron skillet. Pour the melted butter into a large bowl and stir in the sugar; Beat in the eggs and buttermilk. Stir together the cornmeal, flour, baking soda and salt in a small bowl and add to the egg mixture, stirring until blended. Stir in the jalapeño. Pour batter into the prepared pan. Bake on the center rack of oven for 30 to 35 minutes, until the bread is set.
