Smart Recipes, American Recipes, Beef Recipes, Recipes Beef American Mini Meatloaves Mini Meatloaves Recipe | PT1H Serves 4 Ingredients: 0.5 Medium Onion 0.25 Pound Mushrooms 1 Large Carrot 2 Cloves Garlic 2 Tablespoons Italian Dressing 0.5 Cup Mild Salsa 0.33 Cup Quick Oats 2 Large Egg Whites 0.5 Tablespoon Salt & Freshly Ground Black Pepper 1 Pound Ground Beef 0.75 Cup Homemade Bbq Sauce Preheat the oven to 375 degrees. Lightly grease the mini loaf pans with cooking spray. Over medium heat, saute the vegetables and the minced garlic until the onions are translucent, for about 8 minutes. Combine the ground beef with the salsa, egg whites, oats, sauteed onions, and Italian dressing, and form into 8 small balls and transfer to the prepared loaf pans. Spread about 1 tablespoon of barbecue sauce over each mini meatloaf. Place the muffin pan on a sheet pan and bake until center of meatloaves registers 160 degrees on a meat thermometer, for about 25-30 minutes. Bake in the preheated oven for about 30 minutes, or until an instant-read thermometer registers 160 degrees.
