Mini Meatloaves Recipe | PT50M Serves 4 Ingredients: 0.5 Cup Onion 1 Cup Portabella Mushrooms 0.5 Cup Carrot 2 Cloves Garlic 2 Tablespoons Italian Dressing 1 Cup Tomato And Herb Pasta Sauce 0.33 Cup Quick Oats 2 Egg Whites 0.5 Tablespoon Salt 0.5 Tablespoon Black Pepper 1 Pound Ground Beef Preheat the oven to 375 degrees F. Lightly spray an 8 cup muffin pan with cooking spray. Cook the onions, mushrooms, carrots, garlic and Italian dressing in a medium skillet over low heat until the onions are translucent and mushrooms tender, about 5-7 minutes. Remove from the heat. Allow to cool and transfer to a large bowl. Add ½ cup pasta sauce, oats, egg whites, salt & pepper and mix till well combined. Add ground beef and mix well. Form the mixture into 8 balls and place in the prepared muffin pan. Spread about remaining ½ teaspoon pasta sauce over each mini meatloaf. Place the muffin pan on a baking sheet and bake for about 25-30 minutes.
