20 Ounces Spinach2 Tablespoons Unsalted Butter2 Tablespoons Half-And-Half1 Cup Skim Milk1 Medium Onion4 Cloves Garlic2 Tablespoons All Purpose Flour1 Tablespoon Whole Black Peppercorns2 Dried Bay Leaves0.5 Teaspoon Coarse Salt0.25 Teaspoon White Pepper0.25 Teaspoon NutmegHeat milk in small saucepan with peppercorns, cloves and bay leaves. Just warm up, no need to boil. Remove from heat and let stand covered for 30 minutes. Strain the milk mixture in a bowl and discard any solids.
In a saucepan, melt 1 tablespoon of butter over medium heat. Add in flour and cook stirring constantly for a minute or so. Now add milk gradually continuing whisking and cook until milk thickens. Add in nutmeg and half-and-half and season with salt and pepper. Cover and set aside.
