Blueberry Butter Cookies

Blueberry Butter Cookies Recipe | PT40M Serves 12 Ingredients: 1 Cup Unsalted Butter 1.33 Cups Light Brown Sugar 2 Large Eggs 0.5 Cup Granulated Sugar 3 Cups All Purpose Flour 1 Teaspoon Baking Soda 1 Teaspoon Salt 2 Teaspoons Vanilla Extract 1 Cup White Chocolate Chips 1.5 Cups Fresh Blueberries Melt butter in a small heavy saucepan over medium heat with constant stirring. Remove butter from heat once butter is light brown in color. Pour into a small bowl and let rest to cool. When butter is completely cooled place in a large bowl along with sugar and mix with an electric beater over high speed until creamy. Add vanilla and egg and beat again until combined. In a separate bowl, sift together flour, salt and baking soda. Add flour mixture gradually to the egg mixture and whisk with a spatula to combine, do not overmix. Now gently fold in chips and blueberries. Refrigerate the prepared dough for 2 hours at least or 24 hours for best results. Peheat oven to 325 degrees F. Line baking sheets with parchment paper. Scoop dough on to the baking sheet using a large cookie dough scoop. Bake until blueberries have popped and edges are golden brown, for 17 to 19 minutes. Let cool a little before serving.
