Hoppin JohnPT5H15M Serves 6 Ingredients: 2 Bags Frozen Black-Eyed Peas 2 Cups Hot Water 1.25 Cups Scallions 0.75 Cup Red Bell Pepper 2 Teaspoons Hot Sauce 2 Tablespoons Jalapeño Pepper 0.25 Teaspoon Salt 0.25 Teaspoon Freshly Ground Black Pepper 1 Can Diced Tomatoes With Pepper,Celery And Onion 1 Vegetable Or Chicken Flavored Bouillon Cube 0.66 Cup Rice 1 Tablespoon Tomato Paste In a 4-quart slow cooker, place peas, hot water, ¾ cup scallions, hot sauce, bell pepper, jalapeno, bouillon cube and salt and pepper and mix well. Cover the cooker, set on HIGH and cook for 4 hours. Stir in tomato paste, tomatoes and rice and cook again over HIGH for one more hour, until peas and rice are tender and liquid is almost absorbed. Add remaining scallions and serve.
