1 Tablespoon Gram Flour0.25 Teaspoon Ground Turmeric6 Medium Fresh Green Chillies0.5 Teaspoon Salt0.25 Teaspoon Ground Cumin0.75 Teaspoon Ground Coriander4 Ounces Fresh Coriander Leaves;2 Cups Whole Wheat Flour2 Tablespoons Clarified Butter6 Tablespoons WaterTo make the filling, blend the chilies and ginger to a paste. Add a pinch of salt, ground coriander, cumin, turmeric, gram flour and coriander leaves until well combined then divide into 12 portions.To make the dough, mix the flour and salt in a bowl until well combined. Rub the oil into the flour with your fingers. Gradually add the water until well combined then form into a ball. Knead for 4-5 minutes until soft but not sticky. Divide into 12 balls.Take a ball of dough and dust with flour then roll out to about a 5 inch circle. Brush with oil then place a portion of the filling in the center. Fold in half, bringing the ends together to form a seal.Roll lightly again then brush with more oil. Fold in half again to form a triangle with 5 inch sides.Melt clarified butter on a griddle and cook the rotis for 1-2 minutes, turning once during cooking. Drain before serving hot.
