Cheesy Spinach With Radiatore PastaPT35M Serves 4 Ingredients: 4 Cups Radiatore Pasta [3/4Lb] 1 Tablespoon Lemon Juice 3 Tablespoons Olive Oil 0.5 Teaspoon Salt 0.5 Teaspoon Pepper 1 Medium Onion 1 Tablespoon Dried Thyme 0.25 Cup Vegetable Broth 1 Tablespoon Dried Oregano 10 Ounces Fresh Spinach 2 Cloves Garlic 0.5 Cup Light Cottage Cheese Cook pasta following package direction until al dente. Drain. In the meanwhile, heat 2 tablespoons of oil in a large skillet over medium heat. Sauté onion and garlic with oregano and thyme until onions are translucent, for 5 minutes. Add in remaining oil along with cooked pasta. Then stir in spinach, lemon juice, broth, and salt and pepper. Toss well to combine. Cook over low until spinach is wilted, or for about 4 to 5 minutes. Lastly, stir in cottage cheese and serve.
