Fried Eggplant Recipe | PT30M Serves 1 Ingredients: 1 Medium Eggplant 2 Slices Whole Wheat Bread 1 Medium Egg 0.33 Cup Whole Wheat Flour 2 Tablespoons Unsweetened Almond Milk 0 Cooking Spray Preheat oven to 350 degrees F. Whisk almond milk and egg together in a bowl. Combine crumbs and flour on a plate. Now coat each eggplant slice with egg mixture first and then with flour mixture. Arrange slice on a baking sheet and bake until lightly browned or for about 20 minutes. To give slices even better color, grease a nonstick pan with cooking spray and fry slices 15 sec per side.
