RecipeSavants - Collard Green Stew Recipe PT8M Serves 6 Ingredients: 1 Ham Hock 8 Cups Collard Greens 1 Medium Yellow Onion 14.5 Ounces Italian Style Stewed Tomatoes 30 Ounces Hominy 4 Cups Chicken Stock 2 Cups Water 0.5 Teaspoon Black Pepper 0.5 Teaspoon Cumin 0.25 Teaspoon Garlic Powder 1 Pinch Red Pepper Flakes Wash and clean the collard greens. Remove the stem and discard. Chop the leaves into bite sized pieces. Place into a large bowl. Chop the onions and add them to the bowl. Add the stewed tomatoes and hominy to the bowl. Next, Stir in the black pepper, cumin, garlic powder and red pepper flakes until well combined. In a slow cooker, add the ham hock then pour the mixture from the bowl over the ham hock. Then add the chicken broth & water and cook on high for 8 hours.
