Ingredients:
1.75 Cups Cake Flour1.25 Cups Unbleached All-Purpose Flour0.75 Teaspoon Salt1 Tablespoon Baking Powder2 Cups Granulated Sugar1 Cup Butter1 Cup Whole Milk4 Large Eggs1 Teaspoon Pure Vanilla ExtractPreheat oven to 325 degrees. Line a cupcake pan with paper liners. Fit a mixing bowl of an electric mixer with the paddle attachment. Combine flours, salt, baking powder and sugar in the bowl and beat on low speed until mixed. Add butter and mix until butter is coated well with the flour. In a large glass or a jug combine milk, eggs and vanilla. Now gradually, roughly in 3 parts, add wet ingredients to the flour mixture and mix on medium speed, scraping before each addition until incorporated. Avoid over-beating. Fill the paper liners 2/3 full with the prepared mixture and bake about 17-20 minutes, rotating the muffin pan once halfway through. Cool on a wire rack, frost or decorate if desired and serve.
