Chicken & Rice Recipe | PT30M Serves 4 Ingredients: 1 Tablespoon Cornstarch 2 Teaspoons Water 6 Tablespoons Sunflower Oil 2 Leaves Butter Lettuce 1.5 Cups Rice 2 Medium Chicken Breasts 4 Cloves Garlic 1 Medium Egg 2 Cups Broccoli 2 Tablespoons Soy Sauce 2 Tablespoons Fish Sauce 2 Teaspoons Sugar 0.5 Teaspoon Salt 0.5 Teaspoon Freshly Ground Black Pepper In a small bowl, whisk together cornstarch with water until smooth. Place butter lettuce leaves on serving platter. Divide rice equally among the leaves. Set aside. In a large skillet, heat oil on medium heat. Add garlic and cook until golden browned. Add chicken and cook until chicken is done. Pour the beaten egg into the skillet and scramble until cooked. Add in fish sauce, soy sauce and sugar and stir to combine. Add broccoli and cook until broccoli is tender. Add the cornstarch mixture into the center of the skillet and cook for 2 minutes until thickened. Spoon chicken mixture over the rice and butter lettuce leaves.
