Smart Recipes, American Recipes, Eggs,Vegetables,Other Recipes, Recipes Eggs,Vegetables,Other American Low Carb Calzones Low Carb Calzones Recipe | PT50M Serves 4 Ingredients: 2 Large Cauliflower Heads 2 Large Eggs 2 Cups Grated Mozzarella 1 Teaspoon Oregano 1 Teaspoon Garlic Powder 1 Teaspoon Sea Salt 0.5 Teaspoon Freshly Ground Black Pepper 1 Cup Homemade Pizza Sauce 1 Cup Fresh Basil Leaves Preheat oven to 450 degrees. Line 2 sheet pans with silpat or parchment paper and coat with cooking spray. Set aside. In the bowl of a food processor, process cauliflower in batches until minced, not pureed. Transfer to a large microwave-save bowl and microwave on High setting until cauliflower is tender, about 8 minutes. Place in a kitchen towel and squeeze out excess moisture. Return cauliflower to the bowl and set aside. In the same bowl, add egg, 1 cup mozzarella, oregano, garlic powder, salt & pepper. Mix well until incorporated. On first sheet pan, spread 2 cups cauliflower mixture into a thin circle. Leave about 2-3 inches of space and spread another 2 cups into a thin circle. Repeat with second sheet pan to create 4 calzone crusts. Bake until lightly brown, about 7-10 minutes. Remove crusts from oven and top each with 1/4 cup sauce, 1/4 cup mozzarella & 1/4 of the basil leaves. With a spatula, gently fold each calzone in half. Return to the oven and bake until golden brown and cheese is melted & bubbling, about 15-20 minutes. Allow to cool on wire racks for about 5 minutes.
