Ingredients:
3 Cups All-Purpose Flour1.5 Cups Granulated Sugar1 Teaspoon Baking Powder0.5 Teaspoon Salt0.125 Teaspoon Ground Cinnamon0.5 Cup Roasted Peanuts1 Large Egg1 Teaspoon Vanilla Extract1 Cup Strawberry Jam4 Teaspoons CornstarchPreheat oven to 375 degrees. In a large bowl, whisk flour, 1 cup sugar, baking powder, salt, and cinnamon until completely blended. Use a pastry cutter or two butter knives to cut in shortening until mixture is crumbly. Stir in nuts until well incorporated. In another bowl, whisk egg and vanilla until blended. Gradually add to flour mixture, stirring with a fork until crumbly. Reserve 2-1/2 cups crumb mixture for topping. Press remaining mixture onto bottom of a greased 13x9-inch baking pan.Use a spatula to spread jam over the crust evenly and sprinkle with reserved crumb topping. Bake until lightly browned and filling is bubbly, about 40-45 minutes. Transfer pan to wire rack to completely cool. Cut into bars and store in airtight container.
