0.33 Pound Salami0.33 Pound Capocollo0.33 Pound Prosciutto0.5 Pound Parmigiano-Reggiano0.5 Cup Pinzimonio0.5 Cup Marinated Olives1 Cup Roasted Pepper Salad0.25 Cup Olive Oil3 Red Bell Peppers2 Orange Bell Peppers0.33 Cup Pitted Kalamata Olives2 Tablespoons Capers2 Cloves Garlic6 Fresh Basil Leaves0.25 Teaspoon Salt & Freshly Ground Black Pepper1 Loaf Focaccia BreadPreheat the broiler of oven. Line a heavy baking sheet with a piece of foil.Place bell peppers onto prepared baking sheet. Broil for about 15 minutes, flipping occasionally. Remove from oven and immediately, transfer peppers into a resealable plastic bag. Seal the bag and keep aside for about 20 minutes. Remove peppers from bag. Carefully, peel the bell peppers and then remove seeds. Cut each bell pepper into 1/2-inch thick strips. In a bowl, combine bell pepper strips, Kalamata olives, capers, garlic, basil leaves, olive oil, salt and black pepper and toss to coat. Refrigerate, covered up to 2 days.For service, arrange meat, focaccia and cheese on a large platter. Serve with pepper salad, pinzimonio and marinated olives in their own small bowls.
