1 Tablespoon Olive Oil1 Medium Onion2 Cloves Garlic0.125 Teaspoon Saffron Threads2 Cups Chicken Stock1 Cup Your Favorite Jarred Pasta Sauce1 Medium Orange2 Bay Leaves0.5 Teaspoon Chilli Powder0.75 Firm White Fish Fillets16 Medium Prawns0.25 Teaspoon Salt & Freshly Ground Black PepperIn large Dutch oven, heat oil over medium-high heat. Saute onions and garlic for 2 minutes until soft. Stir in saffron, rosemary, chicken stock, pasta sauce, orange zest, chili powder and bay leaves. Season mixture with salt & pepper. Reduce heat and simmer for 5 minutes.Add prawns and fish to the soup and continue to simmer for about 8 minutes or until the seafood is tender. Garnish with the parsley leaves. Serve with a rustic peasant loaf, and creamy butter.
