Philly Cheese Stuffed PeppersPT1H10M Serves 4 Ingredients: 8 Ounces Roast Beef 8 Slices Provolone Cheese 2 Large Green Bell Peppers 2 Tablespoons Olive Oil 2 Tablespoons Butter 1 Medium Sweet Onion 1 Tablespoon Garlic 2 Cups Baby Bella Mushrooms 0.5 Teaspoon Salt 0.5 Teaspoon Black Pepper Preheat oven to 400 degrees F. Wash peppers and cut in half lengthwise. Remove and discard the tops and seeds of the bell pepper. Heat oil and butter in a large skillet on medium heat. Add onion and cook for about 4-5 minutes till just starts to become translucent. Add garlic and mushrooms and cook for about 9-10 minutes until tender. Add beef, salt and pepper and cook for about 5-10 until tender. Put the peppers in a large baking dish, open side up. Place a slice of cheese in the bottom of each bell pepper. Spoon the roast beef mixture evenly into the bell peppers. Top each bell pepper with the remaining cheese. Bake for at least 15-20 minutes until cheese has melted and bell peppers are tender.
