0.5 Pound Slab Bacon1 Small White Onion2 Large Celery Rib1 Large Jalapeño1 Tablespoon Thyme3 Cloves Garlic12 Ounces Irish Lager2.25 Cups Chicken Broth0.25 Cup Unsalted Butter0.25 Cup All-Purpose Flour1 Cup Heavy Cream0.5 Pound Shredded Cheddar Cheese0.25 Pound Shredded Smoked Cheddar Cheese1 Teaspoon Salt & Freshly Ground Pepper0.25 Cup Green OnionsFry the bacon in a Dutch oven over medium heat for 7 minutes or until crispy. Transfer the bacon, to a paper towel lined plate, to drain excess grease.Sauté the onion, celery, jalapeno, thyme and garlic in the bacon fat, for about 5 minutes or until the onions start to become translucent. Stir in beer and cook for another 5 minutes, stir in the chicken broth and bring to a simmer.Melt butter in a separate skillet over medium heat and stir in flour, stirring continuously. Cook for 2 minutes until a light roux is formed. Transfer the roux to the soup and simmer for 10 minutes. Stir in heavy cream, cheddar cheeses, salt, black pepper and cooked bacon. Simmer for another 5 minutes.Serve with a garnish of cheddar cheese and green onions if desired.
This cheese sauce is loaded with tons of fresh pico de gallo, cheddar cheese and a hint of cream cheese. For a kick of heat add jalapenos as suggested or serve without if you’d like a milder sauce. Serve this queso with your favorite corn tortilla chips.
