20 Slices Easy Gyro Meat2 Tablespoons Extra-Virgin Olive Oil4 Large Fresh Pitas2 Cups Mixed Salad Greens12 Large Cherry Tomatoes1 Medium Red Onion1 Cup Feta Cheese0.5 Cup Greek Olives1 Cup Authentic Tzatziki SaucePreheat oven to 350 degrees.On a large sheet of aluminum foil, stack 4 pitas and wrap loosely, and bake in preheated oven for about 10 minutes, or until warm and tender.Meanwhile, slice 20 slices of gyro meat about 1/4 inch thick. In a large skillet, heat oil and fry 10 slices at a time, until browned, about 2 minutes on each side. Transfer meat to a plate lined with paper towels to drain.On four serving plates, place 1 sheet of aluminum foil. Place a pita on each sheet and top with 5 meat slices. Divide the veggies and feta evenly between the 4 gyros and drizzle with a healthy dollop of the tzatziki sauce.Fold gyros over and seal in aluminum foil to keep warm.
