Arrange a rack in the middle of the oven. Season the roast with salt, smoked paprika and black pepper generously. In a large non-stick pan, heat oil over medium-high heat and sear pork roast for about 5-8 minutes per side. In the bottom of a 6-quart Dutch oven, place sauerkraut all evenly and sprinkle with onion, caraway seeds and brown sugar.
