Line 2 sheet pans with Silpat or parchment paper and set aside. In a stand mixer, cream shortening and brown sugar until light & fluffy. Add eggs and vanilla and mix well. Spread filling on the bottoms of half the cooled cookies, then top with remaining cookies. Store in an airtight container.
