0.25 Cup Olive Oil8 Large Fresh Basil Leaves1 Small Onion2.5 Teaspoon Kosher Salt1.5 Teaspoon Freshly Ground Black Pepper4 Large Garlic Cloves28 Ounces Crushed Tomatoes1 Tablespoon Light Brown Sugar1 Tablespoon Red Wine Vinegar1 Bay Leaf2 Slices Slices Of Bread0.25 Cup Milk1 Pound Ground Chicken0.33 Cup Parmesan Cheese4 Slices Mozzarella Cheese2 Large Eggs8 Potato RollsIn a Dutch oven over medium-high heat, heat oil and add onion and 1 teaspoon of salt & pepper. Saute onions until soft and translucent. Stir in the garlic and keep stirring until fragrant, about 2 minutes more. Add the tomatoes, sugar, vinegar and bay leaf. Reduce heat to low and simmer while preparing meatballs.Preheat oven broiler. Use cooking spray to lightly coat a rimmed sheet pan. Set aside.In a small bowl, add bread and milk and stir occasionally, allowing the mixture to soak until the milk is absorbed, about 8 to 10 minutes. In another bowl, combine chicken, 1/4 cup of Parmesan cheese, parsley, garlic, eggs, 1 1/2 teaspoons of salt & 1/2 teaspoon of pepper. Add the bread mixture to the chicken mixture and combine until the ingredients are fully incorporated.On the prepared sheet pan, form meatballs and arrange them at least 2 inches apart. Broil for 5 minutes and rotate the pan. Broil for another 3 minutes, until the meatballs are golden brown.Transfer the meatballs and any meat juice into the sauce and allow them to simmer until cooked through, about 20 to 25 minutes. Discard the bay leaf.Arrange a meatball on the bottom of each bun, and top with a basil leaf, a spoonful of sauce, and a sprinkle of the Parmesan cheese and a slice of mozzeralla cheese, and top with the bun.
