Beef & Potato Hand Pies

Beef & Potato Hand Pies Recipe | PT45M Serves 8 Ingredients: 1 Tablespoon Vegetable Oil 1 Pound Beef Sirloin 0.5 Pound Red Potatoes 1 Tablespoons Tomato Paste 0.5 Teaspoon Dried Thyme 0.5 Teaspoon Worcestershire Sauce 1 To Taste Coarse Salt And Ground Pepper 0.5 Cup All-Purpose Flour Preheat oven to 400°. Heat oil in a medium saucepan over medium heat. Add in potatoes and cabbage and cook stirring constantly for 9 to 10 minutes or until vegetables begin to brown. Add in beef and cook for 5 minutes or until beef is no longer pink. Then add Worcestershire, thyme, tomato paste and 1 cup of water to tenderize the beef and potatoes. Cover and let cook for 15 minutes or until beef and potatoes are tender. Mash the mixture lightly using a fork, season to your taste with salt and pepper and then leave it to cool completely. For the pie: lightly flour the work surface with all purpose flour and then roll each crust into a square measuring 14 inches. Divide each square into 4 equal squares. Next, top one half of each square with half cup of the cooled filling, leaving a border of half an inch all around the square. Lightly brush the dough borders using water and start folding the extra dough from one end to the other, until you properly cover the whole filling inside. To tightly seal, tuck the edges using the fork. Cut 3 small holes using scissors or paring knife over the filled area of the pie. Place pies on baking sheets lined with foil and bake for 10 to 12 minutes or until golden brown. Don't forget to rotate the pies halfway through baking. Freezing Instructions: You can also prepare the pies days ahead and let them freeze to use later on. For this purpose, do the job until you place the prepared pies over baking sheets and then instead of baking just freeze them for an hour or until firm (make sure pies don't touch each other while placing on baking sheet). Finally, wrap up each pie into a foil, store in a resealable plastic bag and then you can freeze them up to 2 months or so. To bake them later on, preheat oven to 400°, place over foiled and rimmed baking sheets and bake for 30 minutes or until golden brown.
