0.33 Cup Extra-Virgin Olive Oil0.5 Pound Prawns0.5 Pound Squid1 Medium Onion15 Ounces Diced Tomatoes3 Cloves Garlic1.5 Cups Arborio Rice3.5 Cups Seafood Stock1 Cup Clam Juice12 Littleneck Clams0.25 Cup Parsley Leaves1 LemonHeat oil in a large skillet or paella pan over medium-high heat. Add shrimp, salt, and squid to the oil and sauté for 2 minutes stirring frequently. Set aside.Reduce the heat of the pan to medium and stir in diced tomatoes and onions. Saute for 10 minutes, then add minced garlic and saute for another 2 minutes. Add rice to the pan and saute for another 2 minutes.Stir in clam juice and seafood stock and bring to a boil, and cook for 15 minutes. Place the squid, clams, and shrimp on top of the rice. Cover the skillet and cook for another 15 minutes, or until the rice is al dente.Remove from the heat and allow the paella to rest for 10 minutes. Garnish with lemon slices and a sprinkle of parsley.
