1 Ounce Uncooked Rice Noodles4 (8-Inch) Sheets Round Rice Paper8 Large Fresh Basil Leaves8 Medium Shrimp20 Slices Cucumber20 Slices Scallion20 Slices Carrot12 Medium Fresh Mint LeavesIn a pan add salted boiling water, cook rice noodles for about 3 minutes. Drain noodles in a colander and rinse under cold water. Again, drain well. Meanwhile soften rice paper in a small bowl of warm water according to package instructions.In a large, shallow dish, place about 1-inch deep hot water. Add1 rice paper sheet in the dish for about 30 seconds or till soft. Remove from water and arrange sheet onto a smooth surface. Place 1 lettuce leaf over rice sheet. Top with 2 basil leaves, followed by 4 shrimp halves, 2 tablespoons noodles, 5 cucumber strips, 5 carrot strips, 5 green scallion strips and 3 mint leaves. Carefully, fold sides of rice sheet over filling and then, roll into jelly-roll fashion. Gently press seam to seal the filling.Repeat with remaining rice sheets and filling.Serve rolls alongside red curry sauce.
