Asparagus With Caramelized Balsamic OnionsPT30M Serves 4 Ingredients: 1 Pound Asparagus 1 Tablespoon Extra-Virgin Olive Oil 1 Onion 0.5 Tablespoon Salt & Freshly Ground Black Pepper 3 Tablespoons Aged Balsamic Vinegar 2 Teaspoons Dijon Mustard 2 Tablespoons Chopped Fresh Parsley In a skillet, heat oil over medium heat and sauté onion slices for about 10 minutes or until caramelized. Set aside. Meanwhile, in a microwave-safe dish, combine asparagus and 2-3 tablespoon of water. With a plastic wrap, cover the dish tightly and microwave on high for 2 minutes. Remove from microwave and drain. In a bowl, combine caramelized onions, mustard, vinegar, salt, and black pepper and mix well. Return onion mixture to the skillet and cook until a thick sauce is formed. Divide asparagus and onion mixture onto serving plates. Garnish with parsley and serve.
