Chicken & Red Salsa Recipe | PT8H10M Serves 5 Ingredients: 5 Medium Carrots 7 Stalks Celery 1 Small Yellow Onion 4 Cloves Garlic 3 Pounds Chicken Thighs 1 Medium Lemon 28 Ounces Red Enchilada Sauce 2 Medium Avocados Place the carrots, celery, onions and garlic in the bottom of a slow cooker. Next, layer the chicken and sprinkle on salt and lemon juice then cover with the enchilada sauce. Cook on low 6-8 hours. Taste and season with more salt or lemon if desired.
