Smart Recipes, American Recipes, Pork Recipes, Recipes Pork American Southern Style Collard Greens PT4H25M Serves 10 Ingredients: 2 Large Vidalia Onions 0.5 Pound Bacon 2 Smoked Ham Hocks 6 Cloves Garlic 8 Cups Chicken Stock 2 Pounds Collard Greens 1 Pound Mustard Greens 0.33 Cup Apple Cider Vinegar 2 Tablespoons White Sugar 1.5 Teaspoons Salt 0.75 Teaspoon Ground Black Pepper 0.5 Teaspoon Crushed Red Pepper Flakes Heat a large stock pot over medium-high heat, and saute bacon until the fat is rendered. Stir in the diced onions, garlic, and crushed red pepper flakes and saute for a few minutes or until the onions are softened. Stir in the chicken stock and ham hocks and simmer for 1 hour. Stir in remaining ingredients and continue to simmer for another 2 hours. Serve the stewed greens with an additional splash of apple cider vinegar and a dash of hot sauce if desired.
