Fill a saucepan with water and bring it to boil. Add peaches in the boiling water and cook for one minute. Peel off their skin and cut them into 1/2-inch-thick wedges. Add sliced peaches, 1/4 cup granulated sugar, blueberries, brown sugar, cinnamon, 1/8 teaspoon salt, allspice and cornstarch in a bowl. Mix gently. Roll it into a 1/2-inch thick sheet and cut nine 2 1/4-inch rounds out of it. Top the fruits layer with the dough rounds and sprinkle 1 tablespoon of sugar on top. Top dough with cubes of butter. Bake for 35 minutes or until the top layer turns golden brown and fruits start to bubble.
