Italian Cream CakePT45M Serves 6 Ingredients: 2 Cups All-Purpose Flour 1 Cup Powdered Sugar 1 Teaspoon Baking Soda 0.25 Teaspoon Salt 2 Cups Sugar 0.5 Cup Shortening 1.5 Cups Butter 5 Medium Eggs 2 Teaspoon Vanilla Extract 1 Cup Buttermilk 0.5 Cup Coconut Flakes 2 Cups Pecans 8 Ounces Cream Cheese Preheat the oven to 350 degrees. Grease and flour three 9-inch round cake pans. In a large bowl, mix together flour, baking soda and salt. In another bowl, combine sugar, shortening and butter and beat till fluffy. Add eggs, one at a time, beating continuously, then stir in 1 teaspoon of vanilla extract. Slowly, add flour mixture and buttermilk and mix until well combined. Fold in coconut and 1 cup of pecans. Divide the mixture into the cake pans evenly and bake for about 20-25 minutes or until a toothpick inserted in the center comes out clean. Remove from the oven and place on the rack to cool completely. To prepare the frosting, beat butter and cream cheese until fluffy. Add powdered sugar and1 teaspoon vanilla extract and beat until smooth. Spread the frosting between all three cakes, stacking them as you frost. Frost the top and sides evenly. Top with remaining pecans. Refrigerate till serving.
