Mocha Mousse Cake

Mocha Mousse Cake Recipe | PT35M Serves 6 Ingredients: 1 Cup Dark Chocolate 0.5 Cup Butter 1 Tablespoon Light Muscovado Sugar 3 Tablespoons Cold Espresso 1 Teaspoon Dark Rum 6 Egg Yolks 0.5 Cup Almonds 2 Tablespoons Cocoa Powder 7 Egg Whites 1 Pinch Salt Preheat the oven to 350 degrees F. In a saucepan, combine the chocolate and butter on low heat, stirring occasionally for about 2-3 minutes or until melted. Remove pan from heat and add the yolks, one at a time to the chocolate, stirring well. Stir in the Muscovado sugar, espresso and rum. Set aside. In a mixing bowl, add egg whites and salt then beat with an electric mixer until stiff peaks form. Gently fold the egg whites mixture into the chocolate mixture. Pour the mixture into the prepared tin. Fold in almonds. Bake for 15 minutes until toothpick inserted in center comes out clean. Cool 10 minutes and run knife around side of pans to loosen cakes. Remove from pans to wire rack and cool completely for about 1 hour. Lightly dust with cocoa before serving.
