8 Flounder Fillets0.25 Cup All-Purpose Flour4 Teaspoon Olive Oil0.25 Cup Dry White Wine3 Tablespoons Fresh Lemon Juice1 Tablespoon Capers3 Tablespoons Unsalted Butter0.5 Teaspoon Black Pepper0.25 Teaspoon Kosher Salt2 Tablespoons Fresh ParsleyLightly season fillets with 1/4 teaspoon each kosher salt and freshly ground black pepper. Place flour in a deep dish and dredge flounder into flour. In a nonstick skillet, heat 2 teaspoon oil over medium-high heat. Add half the fillets and cook 2 minutes per side or until nicely golden. Remove to a platter and cover with foil to keep warm. Repeat the procedure with remaining oil and fillets. In the same skillet, add lemon juice, capers and wine and cook just 30 seconds. Remove from heat and add butter. Swirl until butter melts, season with salt and pepper and serve the sauce over fillets, garnished with parsley.
