1.25 Cup All Purpose Flour0.66 Cup Powdered Sugar6 Tablespoons Unsalted Butter0.125 Teaspoon Salt3 Large Eggs1.5 Cups Granulated Sugar2 Tablespoons Corn Starch1 Large Lemon0.25 Cup Good Quality IPAIn the bowl of a food processor, add 1 cup of flour, 1/3 cup powdered sugar, butter and salt. Process until completely blended.In an 8X8 baking pan, coat bottom & sides with cooking spray. Transfer the mixture to the pan and press it in evenly. Place in the refrigerator to chill about 15 minutes.Preheat the oven to 350 degrees.Bake the crust for 20-25 minutes or until golden brown. Remove the pan from the oven and let it cool completely, about 15 minutes.In a large bowl, add eggs, granulated sugar, flour and corn starch. Whisk until combined. Pour lemon juice and IPA in the mixture and whisk again until combined. Pour the custard over the crust and smooth with a spatula.Bake for 20-25 minutes, or until the custard is set. Cool at room temperature for 15 minutes, before chilling for 3-4 hours. For service, cut into 12 bars and dust with remaining powdered sugar and lemon zest.
